Ingredients
2 oz margarine (melted)
4 large potatoes, peeled and cut in half
1 large or 2 medium parsnips, peeled and cut into 2 inch pieces
1 lb of pork or beef sausuages
1 medium onion, peeled and thinly sliced
Roasting tin
Set the oven to moderately hot, Gas Mark 5 or 375ºF/190ºC.
Method
Brush the base and side of the roasting tin with a little of the melted margarine.
Using a sharp knife, score the cut surface of each potato. Put them at one end of the roasting tin with the parsnips, brush with some of the melted margarine.
Place the sausages at the other end and brush with some of the melted margarine. Cook, above the centre of the oven, for 1 ½ hours. Halfway through cooking (45 minutes), turn the vegetables and sausages and add the onion. Add a little more margarine if necessary
Put back into the oven and continue cooking for the remainder of the time.
Serve with your families favourite vegetables.
