Apple and Mango
1 ripe apple
1 ripe mango
300ml water
2 tbsp baby rice
- Peel and core the apple, chop and put in a saucepan with the water. Bring the water to the boil, turn down and allow to simmer for 12 minutes until soft. While this is cooking peel and slice the mango and remove the large stone, put aside.
- Remove the apple form the heat and pour off most of the water, add the apple to the mango.
- Puree to your desired consistency and allow to cool
- add the baby rice, mix and serve
This recipe is high in vitamin C, apples and mangoes combine perfectly to create a yummy sweet pudding.
